Fiddleheads, the uncurled leaf of an
Ostrich fern, which begin to appear
around late April to early May across
New Brunswick, Quebec and Ontario.
They are harvested when just a few
inches off the ground so they are
still tender and tightly coiled.

They are loaded with iron and potassium,
also fiddleheads are easy to cook like asparagus.
The fiddlehead resembles
the curled ornamentation
(called a scroll) on the end of a violin.
